Baked Trout with Lime and Cilantro

Ingredients:

  • 6 (5-oz.) raw trout fillets (or tilapia, cod, or halibut)
  • 3 Tbsp. fresh lime juice
  • 1 medium tomato, chopped
  • ½ medium onion, chopped
  • 3 Tbsp. chopped cilantro
  • 1 tsp. olive oil
  • ¼ tsp. sea salt
  • ¼ tsp. ground black pepper
  • ¼ tsp. crushed red pepper (optional)

Directions:

  1. Preheat oven to 350° F.
  2. Rinse trout and pat dry. Place in baking dish. Set aside.
  3. Combine lime juice, tomato, onion, cilantro, oil, salt, pepper, and red pepper (if desired) in a medium bowl; mix well.
  4. Pour tomato mixture over fish. Bake for 8 to 12 minutes, or until trout flakes easily when tested with a fork.
