Ingredients:
- 6 (5-oz.) raw trout fillets (or tilapia, cod, or halibut)
- 3 Tbsp. fresh lime juice
- 1 medium tomato, chopped
- ½ medium onion, chopped
- 3 Tbsp. chopped cilantro
- 1 tsp. olive oil
- ¼ tsp. sea salt
- ¼ tsp. ground black pepper
- ¼ tsp. crushed red pepper (optional)
Directions:
- Preheat oven to 350° F.
- Rinse trout and pat dry. Place in baking dish. Set aside.
- Combine lime juice, tomato, onion, cilantro, oil, salt, pepper, and red pepper (if desired) in a medium bowl; mix well.
- Pour tomato mixture over fish. Bake for 8 to 12 minutes, or until trout flakes easily when tested with a fork.
