Chicken and Rice Bowl Deluxe



  • ½ cup brown rice
  • 3 oz chicken breast
  • 1/3 cup lentils
  • ½ cup chopped bell pepper
  • ¼ cup red onion
  • 1 tsp olive oil
  • 2 tsp lemon juice
  • 1 cup boc choy
  • 1 cup mushrooms
  • 1 cup bean sprouts
  • 6 snap peas


Add 1 tsp olive oil to stir-fry pan, add 3 oz chicken and stir-fry until cooked through. Add red onion and bell pepper and stir-fry until tender-crisp. Add mushrooms, boc choy and snap peas and cook until tender crisp, add bean sprouts, lentils, brown rice and lemon juice. Toss together until warmed through.
