Chicken Fruit Salad



  • 4 ounces boneless, skinless chicken breast
  • 2 cups fresh romaine lettuce
  • 1/2 cup pineapple, cut into chunks
  • 1/2 cup grapefruit
  • 1/2 cup strawberries
  • 2 medium kiwi, sliced
  • 1 Tbsp light balsamic vinaigrette dressing


Grill or bake chicken breasts then cut into chunks. Toss all ingredients together in a large bowl. Serve with 1 Tbsp of light balsamic vinaigrette dressing.
