- 1/2 cup brown rice
- 1/4 cup black beans
- 3 ounces boneless, skinless chicken breast
- 2 Tbsp salsa
- 1/2 cup shredded lettuce
- 1/2 cup tomato
- Grill or bake chicken until cooked through and dice into bit size pieces.
- Rinse black beans and warm on stovetop.
- In a bowl, combine shredded lettuce, brown rice, tomato, chicken and beans. Top with salsa.
