Chinese Chicken



  • Non-stick cooking spray
  • 4 oz boneless, skinless chicken breast
  • 1 cup broccoli florets
  • ½ cup sliced mushrooms
  • ½ cup snow peas
  • 2 tsp reduced sodium soy sauce
  • 2 tbsp low-sodium chicken broth
  • 1 tsp sesame oil
  • 1/3 cup brown rice


In a large skillet lightly coated with cooking spray, cook chicken over medium heat until cooked through, about 7 to 10 minutes. Add broccoli, mushrooms and snow peas. Cook until vegetables begin to soften about, about 6 to 8 minutes. Season with soy sauce, broth and oil and serve over brown rice.
