- 1/4 lb. green beans, fresh, edges trimmed
- 1/2 Tbsp. garlic, minced
- 1/4 Tbsp. ginger root, chopped or minced
- 1 scallions, chopped
- 1 Tbsp. low-sodium soy sauce
- 1/2 Tbsp. brown sugar
- 1/2 Tbsp. toasted sesame, peanut, or olive oil
Heat oil in a wok or frying pan on medium-high heat. Add garlic, ginger, soy sauce, and brown sugar. Stir to mix and cook for 2 minutes. Add green beans and scallions, and stir-fry for 7 to 10 minutes. Do not overcook, or the beans will become mushy.
