Cool Quinoa Salad



  • 2 cups of cooked quinoa, cooled (approx.. ½ cup uncooked)
  • 1 large cucumber, diced
  • 1 cup of cherry tomatoes, cut into halves
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1/3 cup of low-fat feta cheese, crumbled
  • 5 tablespoons of olive oil
  • 2 tablespoons of balsamic vinegar
  • 1 or 2 squeezes of fresh lemon juice
  • Salt and pepper to taste


In a large bowl, add cucumber, tomatoes, peppers, and feta to cooled and dried quinoa. In a separate bowl, mix olive oil, vinegar, lemon juice, and salt and pepper. Add to quinoa mixture and toss well. Serves 2 to 4 people. This makes a great veggie dish with the high-protein quinoa, but you can easily add chicken or a protein of your choice.
