Fish with Lemon Sauce

Ingredients:

  • Nonstick cooking spray
  • 4 (4-oz.) each pieces white fish (cod, sole, turbot, etc.)
  • ¼ tsp. sea salt
  • 1 dash ground black pepper
  • 1 tsp. olive oil
  • 1 medium shallot, coarsely chopped
  • ¼ cup dry white wine
  • 2 tsp. unsalted butter
  • 2 tsp. grated lemon peel
  • 2 Tbsp. fresh lemon juice

Directions:

  1. Preheat oven to 350° F.
  2. Spray 10×6-inch baking pan with spray. Place fish in pan; season with salt and pepper. Bake, covered, for 12 to 15 minutes, or until fish flakes easily when tested with a fork.
  3. While fish is baking, heat oil in medium nonstick skillet over medium heat.
  4. Add shallot; cook for 1 to 2 minutes, or until shallot softens.
  5. Add wine; bring to a boil. Boil for 3 to 5 minutes, or until wine is reduced by half.
  6. Add butter; cook for 1 to 2 minutes, or until butter melts. Remove from heat.
  7. Add lemon peel and lemon juice; whisk to blend.
  8. Place fish on serving platter; top with sauce.
