Goyafit’s Hamburger (Ground Turkey), Tomato, Macaroni Soup

Ingredients:

  • 2 Tbsp. Extra Virgin Olive Oil
  • 1 Tbsp. Garlic, minced
  • 1 Medium yellow onion, diced
  • 1 cup celery, sliced
  • 1 cup carrots, sliced into ½ moons
  • 1 lb. ground beef > sub out ground turkey or extra lean chicken to lean this out
  • 1 28 oz can stewed tomatoes with Italian seasoning
  • 4 cups beef broth
  • 1 8 oz can tomato paste
  • 1 cup elbow macaroni, uncooked > use whole grain for a healthier option
  • 1 Tbsp. Italian seasoning
  • 1 bay leaf
  • Salt and Pepper to taste
  • Add water to reach desired consistency

Directions:

  1. Heat 1 Tbsp. olive oil in a large stock pot on medium high heat.
  2. Add garlic, onion, celery and carrots and saute until slightly tender, set aside.
  3. Heat 1 Tbsp. olive oil and add ground beef, saute until well browned.
  4. Mix ground beef, garlic, onion, celery and carrots together in stock pot.
  5. Add tomatoes, beef broth, tomato paste, Italian seasoning, salt, pepper, bay leaf and water.
  6. Heat to boiling, reduce heat to low and simmer for one hour.
  7. 10 – 15 minutes before you are ready to serve, add elbow macaroni and simmer until tender.
