Grilled Vegetables

Ingredients:

  • 1/4 medium red onion, sliced
  • 1/2 medium carrot, sliced lengthwise
  • 1/4 medium green bell pepper, cored, cut into quarters
  • 1/4 medium orange (or red) bell pepper, cored, cut into quarters
  • 1/4 medium zucchini, sliced lengthwise
  • 1 tsp. olive oil
  • Sea salt and ground black pepper (to taste; optional)
  • 1 Tbsp. balsamic vinegar

Directions:

  1. Preheat grill or broiler on high.
  2. Brush vegetables with oil; season with salt and pepper if desired.
  3. Grill or broil onion and carrots for 2 to 3 minutes, turning occasionally.
  4. Add bell peppers; cook for 1 to 2 minutes, turning occasionally.
  5. Add zucchini; cook for 2 to 3 minutes, turning occasionally, until vegetables are tender-crisp.
  6. Place on a serving platter; drizzle with vinegar.
