Lemon-Glazed Salmon and Asparagus



  • 2 medium-sized salmon filets
  • 1 whole lemon
  • 2 tablespoons of olive oil
  • 1 bunch of asparagus, tips removed
  • 1 cup of cooked brown rice
  • Salt and pepper


In a small bowl, whisk together lemon juice and olive oil until incorporated. Place salmon and asparagus on a baking sheet lined with parchment paper or tin foil and brush with lemon-oil mixture. Sprinkle with salt and pepper to taste. Serve with rice. Serves 2 people.
