Mango Salsa

Ingredients:

  • 1 medium mango, peeled, finely chopped
  • ½ medium red bell pepper, finely chopped
  • 1/3 medium red onion, finely chopped
  • 3 fresh cilantro sprigs, finely chopped
  • 1 tsp. crushed red chili pepper (optional)
  • 2 Tbsp. rice wine vinegar

Directions:

  1. Combine mango, bell pepper, onion, cilantro, pepper (if desired), and vinegar in a medium bowl; mix well.
  2. Refrigerate for at least 30 minutes to blend flavors.
