Sherri’s post workout Omelette



  • Pam cooking spray
  • Four large mushrooms sliced
  • 1 cup spinach
  • 1 Tbsp minced Garlic
  • 2 large eggs
  • 1/3 cup light tex mex cheese (any cheese will do)


Lightly coat pan with cooking spray and plan on burner on medium heat. Add mushrooms, spinach and garlic to the pan and saute for approximately 10 minutes.  Set aside. Lightly coat another pan with cooking spray.  Scramble two eggs and pour into pan, cook on medium heat until eggs are firm and no longer runny.  Flip over and place spinach mixture on half, top with cheese, fold other half of eggs over and cook until cheese is melted.  🙂
