Shrimp and Scallop Stir-fry



  • 1/2 cup Quinoa
  • 2 tsp raw organic extra virgin coconut oil
  • 1 cup shrimp and scallops
  • 1 cup broccoli
  • 1/2 cup mushrooms
  • Mediterranean Seasoning Blend to taste

Mediterranean Seasoning Blend:

  • 4 Tbsp. dried parsley
  • 4 tsp. dried onion flakes
  • 2 tsp. dried basil
  • 1 tsp. ground oregano
  • 1 tsp. ground thyme
  • 1 tsp. garlic powder
  • 1 tsp. sea salt
  • 1/4 tsp. ground pepper


In a stir-fry pan on medium-high heat, heat 2 tsp coconut oil. Once the oil is hot add shrimp and scallops, broccoli and mushrooms and season to taste with the Mediterranean seasoning blend. Stir-fry until the mixture reaches desired tender-crispness, approximately 15 minutes.

Serve hot on a bed of quinoa.
