Ingredients:
- 2 oz. washed leaf spinach, stems removed
- 1/4 small red onion, finely sliced
- 1/4 tomato, diced
- 1/4 cup fresh mushrooms, sliced
- 3 oz. cooked turkey breast meat
Dressing:
- 1 Tbsp. orange juice
- 1/2 Tbsp. red wine vinegar
- 1/2 tsp. olive oil
- 1/2 small garlic clove, minced
- 1 Tbsp grated Parmesan cheese
Whisk together all dressing ingredients and set aside. In a large bowl, combine all salad ingredients. Drizzle dressing on top and toss gently.
