Taco Pierogies

Filling Ingredients:

  • cooking spray
  • 1 lb ground beef
  • 1 package taco seasoning
  • 1 cup tex mex shredded cheese (can use more if wanted)

Filling Directions:

  1. Spray large skillet with cooking spray.
  2. Heat skillet on medium-high heat.
  3. Add ground beef to skillet and cook until no longer pink.
  4. Add taco seasoning, mix thoroughly and continue to cook for another 5-10 minutes until well-browned.
  5. Add cheese and continue cooking until cheese is melted, ensure you are stirring continuously while cheese is melting.
  6. Set aside.

Dough Ingredients:

  • 3 cups flour
  • 3/4 tsp salt
  • 1/3 cup vegetable oil
  • 3/4 cup hot water
  • 3/4 cup cold water
  • 1/2 tsp vinegar

Dough Directions:

  1. Add flour and salt to large mixing bowl, mix well.
  2. In a separate bowl, combine hot and cold water, vegetable oil and vinegar. Mix well.
  3. Pour liquid mixture into flour mixture and mix thoroughly.
  4. Dough should be elastic but not sticky, add more flour or water until desired consistency is achieved.

Assembly:

  1. Pull two-inch ball from the dough mixture and roll thin on a well-floured surface.
  2. Use teaspoon to dab a heaping spoonful onto the dough about two inches from the edge.
  3. Fold dough over on top of the filling and pinch edges to seal in a triangular shape.
  4. Use pizza cutter to cut triangular-shaped pierogie from remaining dough.
  5. Ensure edges are well sealed by pinching them.
  6. Set on wax paper and continue making pierogies one by one.
  7. Once all dough and filling is gone, place pierogies on tray separated by wax paper in freezer to flash freeze.
  8. A few hours later you can remove from freezer, pull pierogies off wax paper and freeze in ziploc bags in dozens.

Preparation:

  1. Remove bag of pierogies from freezer.
  2. Heat skillet on medium-high heat.
  3. Add 1/4 cup butter to skillet and melt butter.
  4. Once butter is melted add pierogies, one by one, flat side down and cook until golden brown.
  5. Flip pierogies over and cook until golden brown on the other side.
  6. Serve with sour cream.
